I made this marrow and pecan cake at the weekend, from this month’s BBC Good Food magazine. There are so many good things to say about the recipe that I thought I’d just get straight to the point.
- its the best way I’ve found of using up a stray marrow.
- it tastes like carrot cake.
- the only really bad stuff in the recipe is 50g of butter and full-fat cream cheese, both used for the icing.
- the texture is gorgeous.
- your friends’ surprised faces when you tell them there is marrow in the cake.
